I know, it’s fall, and you’re probably thinking we’re out of summer salad season. But right now we’re in the middle of October #Unprocessed and I’m looking at ways to make REAL FOOD without any CRAP in it and BIG YUMMY SALADS are one of those great things. Sometimes a girl just craves big salads.
I really love chopped salads and this one has a lot of goodies in it. What I did was gently combine two salad-y things that I found on Pinterest to make my own. Mostly because I didn’t have all the ingredients for either salad but I had some ingredients from each.
So here it is. The BIG CHOPPED SALAD!
The Chopped Salad with Feta. Ingredients: Dressing Ingredients: Directions: Wash, peel and dice all of your veggies and put them in a big bowl. Add cheese, garlic and toss. In a separate bowl, whisk together the dressing ingredients until creamy. Wash and chop iceberg lettuce. (Normally I’m a spinach girl but sometimes I just want some classic iceberg.) Pile the lettuce in your bowl and top with as much veggie mix as you want. Add some dressing and toss. This will make as many salads as you want providing you’re not stealing all the veggies for your own salad like I did. Store the veggies, lettuce and dressing separate for use the next day (if you want “dressing control”). I would say it makes 2 BIG salads, but 4 or more small ones and the veggies taste BETTER the next day. Yum. ENJOY! Post Footer automatically generated by wp-posturl plugin for wordpress.
