Today’s recipe is delicious and I also happen to have a giveaway to go along with it!

My family is a big fan of chili. Huge.
My kids actually prefer the chili without the meat for some reason and they LOVE the beans, so we use a LOT of beans. (Insert beans being a musical fruit joke here.)
I actually love the meaty chili, so in this recipe between me and the kids, we got to compromise and make a meatless chili using a vegetarian hamburger mix from Harmony Valley.
And I have to tell you, it was delicious.
I am usually a skeptic when it comes to meatless stuff and in fact, I sort of was. But I need to incorporate more meatless proteins into my diet which is why I wanted to give this a try.
Here is my recipe and it is short and sweet. Really. In fact, I sort of cheat. Because I use this:

The Brown Bag Chili Mix. But that’s ok right? It really is the best.
Ok here’s the recipe.
Vegetarian Chili
Ingredients:
- Harmony Valley Vegetarian Hamburger Mix (You can get this at Whole Foods)
- One bag of Brown Bag Chili Mix which you can get at almost any grocery store.
- 8 oz. can tomato sauce
- 2 cups water
- 1 can red kidney beans
- 1 can red beans regular
- Low-fat sour cream
- Low-fat cheddar
Directions:
Follow directions on Harmony Valley package to hydrate the mixture.
Then, cook it like you would cook ground beef in large skillet
Add the water, tomato sauce, beans and only 1/2 of the Brown Bag spice packet. I say 1/2 because in vegetarian chili, the full seems to make it pretty spicy, perhaps because the beans soak it all in. But you can use more, it depends on how spicy you want it. The kids can’t take too much spice, however, my husband would have full on spice if he could.
Cook for at least 10 minutes or until hot and bubbly.
Spoon into bowl, dollop some sour cream and cheddar cheese on top and it’s amazing! Even better with some corn muffins! Enjoy!
